In the desktop context, yeah, I wouldn't run stable there either.
Definitely agree with you on that. Can't live without kontact, kopete,
OOo 1.1.2, etc. However, debian 'stable' is strong on the server side,
accounting for quite some of those numbers on distrowatch.

Sure you do. But what do you use as the base? The beauty of debian
stable is you can use everything from the stable tree except for a
single package (spamassassin, clamav, samba, etc). Then you have all
the stability and security of stable, with the critical new
functionality that you need.

Few people use pure debian stable, but then again, a lot of people
customize their RHEL, SuSE servers, etc. That's why sysadmins are paid
the big bucks :) (semi-sarcasm there)
